Ingredients
½ | lemon, zest and juice |
2 | oranges, juiced |
200 g | dried apricot, diced |
30 g | butter |
2 tbsp | sugar |
250 ml | water |
1 pinch(es) | salt |
25 | pistachios, chopped |
some | lemon balm |
200 g | pasta (farfalle) |
Instructions
Melt the butter and caramelize the sugar. Add the apricots and sauté. Pour in the water, lemon juice and orange juice. Stir in the lemon zest and cook over low heat for 20 minutes.
Cook the farfalle in salted water until al dente. Drain.
Purée the apricot sauce and mix with the cooked pasta. Arrange the pasta on serving plates. Garnish with the pistachios and lemon balm.
Serve together with vanilla ice cream.
