Fancy carrot soup recipe details
Ingredients
300 g | carrots, peeled and sliced |
1 tbsp | canola oil |
400 ml | vegetable stock |
75 ml | orange juice |
1 tbsp | soy sauce |
1 | dried chilli pepper |
2 tbsp | sour cream |
1 tsp | freshly grated ginger |
2 tbsp | watercress, chopped |
salt and pepper | |
1 | shallot, finely chopped |
Instructions
Fry the shallots in hot oil until soft. Add carrots, stock and orange juice and bring to a boil. Stir in soy sauce and add the chilli pepper. Cook over low heat for about 15 minutes until the carrots are soft. Remove the chilli pepper and puree the soup with a hand blender. Season to taste with salt and pepper.Mix the sour cream with ginger and watercress.
Ladle the soup into soup plates. Serve garnished with a dollop of the ginger and watercress cream.
