Ingredients
1 large can(s) | chickpeas, 400g size, drained and rinsed, excess water lightly shaken off |
1 clove(s) | garlic, peeled |
1 medium | red onion, peeled and quartered |
1 bunch(es) | parsley, small |
1 tsp | ground cumin |
1 tsp | ground coriander |
½ tsp | chilli powder |
2 tbsp | plain flour |
2 tbsp | sunflower oil |
4 piece(s) | pitta bread, warmed in oven or lightly toasted under grill, and split down one side |
1 | tub tomato salsa, about 200g size or use home made |
salt, to taste | |
pepper, freshly ground, to taste | |
For the green salad: | |
lettuce, torn | |
onion, sliced | |
cucumber, sliced |
Instructions
Turn chickpeas onto a few sheets of kitchen paper and pat or roll dry. Tip into food processor together with onion, garlic, parsley, spices, flour and salt and a light sprinkling of pepper. Blend until almost smooth, but allow some texture to remain.Divide into four and shape into 4 flattened patties with your hands. A little flour on your hands may help. Set aside.
Heat a non-stick frying pan, add the oil and heat. Add patties and fry for about 3 minutes each side until golden. Serve hot in warmed pitta bread with a tablespoonful of salsa and a quantity of green salad.
