Ingredients
125 g | unsalted butter |
125 g | sugar |
250 g | plain flour |
4 tbsp | golden syrup, warm until fluid |
½ tsp | salt |
2 tsp | baking powder |
2 tsp | bicarbonate of soda |
2 tsp | mixed spice |
3 tsp | ground ginger |
1 tsp | ground cinnamon |
Instructions
Preheat the oven to Gas Mark 6, 200°C, 400°F.
Sieve the flour, salt, spices and raising agents into a bowl. Rub in the butter and mix in the sugar. Add the warm syrup and work together thoroughly.
Flour your hands and roll portions into small balls and place, well spaced, onto a greased baking tray.
Bake on top shelf until just beginning to colour and then move to bottom shelf until golden brown.
Allow to cool before serving.
