Ingredients
Serves: 8- 1 egg
- 1 can cream of mushroom soup
- 32 saltine crackers
- 1/2 cup finely chopped portabella mushrooms
- flour
- frying oil

2. Whisk the egg in a mixing bowl and stir in the mushroom soup. In a large bread sack or bag crush the crackers, then add to the soup/egg mixture. Fold in the chopped mushrooms. This wil make a very “gooey” batter. Dip approximately one Tablespoon of the mixture in flour. Add just enough oil to cover the bottom of a skillet and heat over medium heat. Put mixture in skillet and press down to about ¼ inch thick. Fry, turning once until both sides are browned and crispy.

4. Preheat oven to 450 degrees F (230 degrees C).
5. Lightly oil or use Pam on a cookie sheet. Use about on tablespoon of mix on the cookie sheet and press down to about ¼ inch. Do not dip in flour. Cook 5-6 Minutes then turn the mushrooms over and continue to cook for another 5-6 minutes until browned.
