Ingredients

1 kg cooking apples, or 2 or 3 large ones
175 g sugar
1 tbsp water
110 g butter
2 medium eggs, beaten
150 g self-raising flour

Instructions

Preheat oven to Gas Mark 5, 375°F, 190°C.

Core, peel and slice the apples quite thickly and place in an ovenproof dish with 60g of the sugar and the water. Cover loosely and cook for 10-15 minutes until softened.

In a bowl cream the butter and sugar. Add the eggs and then beat in the flour and mix to a stiff consistency. Add a little milk if required to bring the dough together.

Remove the apples from the oven and spread the batter over the top. Return to the oven and bake for another 30 minutes until golden. Insert a knife in the pudding; if it comes out clean the sponge topping is cooked, otherwise bake for another few minutes.

Serve hot, warm or cold with custard, cream or ice cream.

Serves 4-6 comfortably.
