Eggs with piquant mayonnaise recipe details
Ingredients
6 tbsp | of thick mayonnaise or more, preferably homemade |
1 tbsp | lemon juice |
1 clove(s) | garlic, crushed |
2 tbsp | parsley, finely chopped |
1 tbsp | tarragon, finely chopped |
1 tbsp | basil, finely chopped |
2 tbsp | capers |
2 can(s) | anchovy fillets in oil (50g each) |
black pepper | |
6 large | hard boiled eggs |
1 | curly endive lettuce |
Instructions
Put the mayonnaise into a bowl. Add the garlic, herbs and 1 tablespoon of the capers, chopped. Chop half of the anchovy fillets very finely and also add to the mixture. Season with the pepper.Arrange the lettuce leaves on individual plates, cut the eggs in half lengthways and arrange them on top of the lettuce, cut side down. Spoon the herb mayonnaise over and arrange remaining anchovy fillets crosswise over each egg. Decorate with the remaining capers.
Serve chilled.
Can also be offered individually ( ½ egg) at a party buffet.
