Turkey thigh with apple and celery recipe details
Ingredients
2 | onion |
1 | turkey thigh, approximately 800 g |
salt and pepper | |
4 tbsp | spicy mustard |
2 tbsp | concentrated butter |
3 tbsp | grainy mustard |
250 ml | stock |
1 bunch(es) | celery |
500 g | apples |
4 sprig(s) | lemon balm |
100 g | sour cream |
Instructions
Preheat the oven to 200°C.Finely dice the onion. Pat dry the turkey, season to taste with salt and pepper, then brush the meat with 3 tbsp spicy mustard.
Heat the concentrated butter in a roasting tin and sauté the turkey thigh turning occasionally. Add the diced onion and brush the top of the turkey with the grainy mustard. Deglaze with the stock, transfer in the preheated oven and roast for approximately 75 minutes.
Slice the celery. Core, quarter and cut the apples in wedges. Place the celery for the last 30 minutes and the apples for the last 5 minutes around the meat.
Finely chop the lemon balm. Remove the meat, the celery and the apples from the roasting tin and keep warm. Refine the gravy with sour cream, mix in the chopped lemon balm and season to taste with mustard, salt and pepper.
Serve the meat with the celery-apple mixture and the gravy and garnish with a leaf of lemon balm.
