- Ingredients
- 1/4 cup butter
- 1/4 cup flour
- Pinch of salt
- 2 cups milk
- 1/4 pound Velveetaprocessed cheese
- 1/2 cup chopped tarragon
- English muffin (1 per serving)
- Canadian bacon (3 slices per serving)
- Eggs (1 per serving)
Very similar to Eggs Benedict, but the sauce is a McBirney specialty.
To prepare sauce:Melt butter. Add flour to butter to form a roux. Add salt. Gradually add 2 cups of milk over medium heat until sauce thickens. Add Velveetacheese and tarragon.
To assemble:Toast an English muffin (McBirney uses homemade English muffins). Grill Canadian bacon. Poach eggs (McBirney uses double yolk). Place 1/2 English muffin on plate. Top with Canadian bacon. Top with poached egg. Place 1/2 cup tarragon sauce over all. Tilt other half of English muffin next to “tower.”
