A tasty sauce covers this pork and sugar snap pea stir fry, and soaks into your rice too. A delicious plate of food that cooks faster than it would take to drive to the local Chinese joint.

Ingredients
Serves: 4- 2 tablespoons cornstarch
- 1 cup beef broth
- 3 tablespoons soy sauce
- 1 tablespoon sugar
- 1 1/2 teaspoons ground ginger
- 1/2 teaspoon garlic powder
- 1/2 teaspoon crushed red pepper flakes
- 1 (1 pound) pork tenderloin, cut into 2-inch slices
- 2 tablespoons canola oil
- 1 (16 ounce) package frozen sugar snap stir-fry vegetable blend, thawed
Preparation method
Prep: 5 mins | Cook: 15 mins1. Whisk cornstarch together with beef broth, soy sauce, sugar, ginger, garlic powder, and red pepper flakes in a bowl.
2. Pour 1 tablespoon oil into a large skillet (cast-iron, if you have it) and set over high heat. Add pork and cook until browned, then set on a plate and cover with foil.
3. Add 1 tablespoon oil to the skillet and cook the vegetables for about 5 minutes, until almost tender. (Watch out for oil splatters when the veggies hit the pan.) Drizzle with the cornstarch mixture. When liquids boil, cook for 2 minutes to thicken.
4. Stir pork strips back into the skillet. Warm through, then serve with rice.
