Ingredients
Serves: 4- 8 ounces orzo, cooked according to package instructions and rinsed thoroughly
- 2 tablespoons olive oil
- 1 pound sea scallops
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup chopped onion
- 3 garlic cloves, minced
- 3 Spanish chorizo sausages (8 ounces total), cut into 1/4-inch slices
- 1/2 teaspoon paprika
- 1/4 teaspoon saffron, crushed
- 1 (7 ounce) jar roasted red peppers, drained and chopped into strips
- 1/2 cup chicken broth
- 1/3 cup pimento-stuffed olives, halved
- 3 tablespoons chopped fresh cilantro
Preparation method
Prep: 15 mins | Cook: 20 mins1. Pour 1 tablespoon oil into a skillet and place over medium-high heat. Sear scallops in hot oil, seasoning with 1/4 teaspoon salt and 1/8 teaspoon pepper as you go. They will need about 4 minutes in the skillet, flipping once. Remove to a plate and cover with foil.
2. Pour 1 tablespoon oil into the skillet and place over medium heat. Cook onion and garlic in hot oil for 1 minute, then stir in chorizo, paprika, saffron, and roasted red pepper. Cook for 5 minutes.
3. Add broth, cooked orzo, scallops, and olives. Heat through, then season with cilantro, salt, and pepper. Serve.
