Ingredients
Serves: 4- 1 cup giardiniera (pickled Italian vegetables), drained
- 1 cup packed baby arugula leaves
- 1/4 cup pitted green olives
- 8 slices thick-cut white bread
- 1/4 cup butter, at room temperature
- 8 thick slices Provolone cheese
- 8 slices prosciutto
- 8 slices spicy soppressata
- 8 slices salami
Preparation method
Prep: 15 mins | Cook: 8 mins1. Pulse giardiniera, arugula, and olives together in a food processor until combined but still chunky.
2. Butter all slices of bread on one side, and flip over. Spread slices with giardiniera. On four of the slices, build sandwiches with meats and cheese (cheese as the first and last layers). Set bread, butter-side-up, on top of the sandwiches.
3. Place a cast-iron skillet over medium heat. When the skillet is hot, set the buttered sandwiches in the pan. Cook for about 4 minutes, then flip and cook for another 3 or 4 minutes to brown both sides and melt cheese.
4. Slice in half and serve.
