- Ingredients:
- Medium-sized Golden Delicious apples – 1 per person
- Sugar & Spice Mixture:(This recipe makes about 2 cups)
- 1/2 pound light brown sugar
- 1/2 pound dark brown sugar
- 2 teaspoon cinnamon
- 1 whole nutmeg – freshly grated
- 1/2 to 1 cup coarsely chopped pecans
Instructions:
Serve with a sprinkle of honey wheat germ and heavy cream. Also great as a dessert with a scoop of Haagen Dazs Honey Vanilla Ice Cream.
Mix sugars, spices and nuts very thoroughly. Store in an air-tight container in dry place. Core and peel apples. Place each apple in an individual microwavable ramekin. Lightly pack about a heaping Tablespoon of sugar mixture in each apple’s center and sprinkle some on the top and sides. Cover with microwavable plastic wrap.
Cooking time will depend on the number of apples you are cooking and the wattage of your microwave. Microwave on high:>1 apple — 6 to 6-1/2 minutes … 2 apples — 7 minutes … 4 apples — 8 minutes.
Ready when springy to the touch. They will also hold in a warm oven for 30 to 45 minutes.
