This is a quick side dish that is great with any Mexican dish.

Ingredients
Serves: 4
- 1 tablespoon olive oil
- 1 cup un-cooked rice
- 1 cube tomato and chicken bouillon (found in the Mexican food isle at the grocery store)
- 2 cups of water
- 1 cup frozen peas and carrots
Preparation method
Prep: 10 mins | Cook: 20 mins
1. In a deep pan with a good fitting lid, sauté the rice in olive oil. USE CAUTION – Add one cup water and the bouillon cube. Stir the bouillon cube until it is completely dissolved. Add the cup of frozen vegetables and bring to a boil. Cover and simmer for 20 minutes. Don’t remove the lid while cooking!
