Easy Mexican Chicken Breasts for Two

A simple recipe for two, with plenty of flavor. You could serve this as is, or slice the chicken and make fajitas.

Ingredients
Serves: 2- 2 (4 ounce) boneless skinless chicken breast halves
- 2 teaspoons taco seasoning
- 4 teaspoons canola oil
- 1 small onion, sliced
- 1 small green bell pepper, thinly sliced
- 1/4 cup salsa
- 1 tablespoon lime juice
Preparation method
Prep: 10 mins | Cook: 16 mins1. Toss chicken in taco seasoning. Pour 2 teaspoons oil into a nonstick skillet and set over medium heat. Cook chicken in hot oil for about 10 minutes, flipping once midway through cooking time, until chicken is no longer pink in the middle. Transfer to a plate and cover with foil.
2. Add 2 teaspoons oil to the skillet. When oil is hot, stir onions and peppers into the skillet and cook for about 6 minutes to soften. Add salsa and lime juice. Toss to coat.
3. Serve chicken with vegetables poured over each helping.
