Easy grilled swordfish with salsa dressing recipe details

Ingredients
Serves: 4- Orange Salsa:
- 1 large orange
- 1 pound ripe tomatoes, seeded and diced finely
- 4 large scallions, green parts only, finely chopped
- 1 orange bell pepper, seeded and diced finely
- 1 yellow bell pepper, seeded and diced finely
- 1 teaspoon ground cumin
- 2 teaspoons olive oil
- 1 jalapeno pepper, seeded and finely chopped
- Salt and pepper
- Swordfish:
- 4 (5 ounce) swordfish steaks, 1/2-inch thick
- 1 teaspoon olive oil
- 2 tablespoons finely chopped fresh cilantro
Preparation method
Prep: 20 mins | Cook: 5 mins1. In a mixing bowl, combine zest and 4 tablespoons juice from the orange with tomatoes, scallions, peppers, cumin, olive oil, jalapeno, and salt and pepper. Stir well, then cover and refrigerate for at least 20 minutes.
2. Preheat grill to high and lightly oil grate. Coat fish with oil and grill for about 5 minutes, turning once and brushing with oil as needed.
3. Serve fish with salsa on top and garnished with cilantro.
