Easy grilled scallops with spicy summer salsa recipe details
Three easy steps to a fresh seafood dinner: Rice in a rice cooker, a very simple salsa, and fast-cooking scallops on your grill.

Ingredients
Serves: 4- 1 cup jasmine rice
- 1/2 cup red pepper, diced
- 1/2 cup cucumber, diced
- 1/2 cup mango, diced
- 1/2 cup avocado, diced
- 1 jalapeno pepper, seeded and finely chopped
- Chopped cilantro, to taste
- 2 tablespoon fresh lime juice
- 12 large sea scallops, patted dry
- Salt and pepper
Preparation method
Prep: 10 mins | Cook: 10 mins1. Combine rice and water in rice cooker according to manufacturer’s instructions and cook.
2. While rice is cooking, combine red pepper, cucumber, mango, avocado, jalapeno, cilantro, and lime juice in a bowl. Set aside.
3. Preheat grill to medium-high heat and lightly oil grate. Sprinkle scallops with salt and pepper, then place on grill (with tongs, ideally). Cook for 3 minutes on each side.
4. Serve scallops and salsa over rice.
