Ingredients
Serves: 4
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 red bell peppers, thinly sliced
- 2 yellow bell peppers, thinly sliced
- 6 ounces sugar snap peas
- 1 pound halibut or cod fillet, skinned and cut into bite-sized chunks
- Zest and juice of 1 lemon
- 1 teaspoon red pepper flakes
- 1 1/4 cups frozen peas, thawed
Preparation method
Prep: 10 mins | Cook: 10 mins
1. Pour 1 tablespoon oil into a large skillet or wok and set over high heat. Cook onion in hot oil for 1 minute, then add bell peppers, and sugar snap peas.
2. Cook for another 4 to 5 minutes, until vegetables are crisp-tender. Transfer to a plate and cover with foil.
3. Pour remaining tablespoon oil into the skillet. Cook fish in hot oil for 4 minutes to cook through, then stir in lemon zest, lemon juice, pepper, cooked vegetables, and peas.
4. Cook for 2 minutes to heat through, then serve.
