Creamed Parsnips recipe

|800 g||parsnip, peeled, roughly chopped|
|150 ml||single cream|
|fresh parsley, chopped, to garnish|
Bring water to the boil and cook the parsnips for 35-40 minutes, until very tender.
Drain thoroughly then return to the pan and mash the parsnip using a potato masher. Stir in the cream and season to taste.
Garnish with parsley and serve hot.
