Easy chicken and yellow rice recipe details
Easy to make Chicken and Yellow Rice, served just like your local Spanish restaurant.

Ingredients
Serves: 6- 5 1/2 cups water
- 3 teaspoons chicken bouillon
- 4 chicken breasts (or equivalent dark meat)
- 1 diced green pepper (optional)
- 4 tablespoons olive oil
- 1 large package yellow rice
- your favorite chicken seasoning
- pepper
Preparation method
Prep: 10 mins | Cook: 1 hour 5 mins1. Preheat oven to 425 degrees F (220 degrees C).
2. Bring water & chicken bouillon to a boil in a large sauce pan. Boil Chicken and green peppers for 20 minutes. (Until cooked.)
3. Set the chicken aside and pour the broth into a 9×13 casserole dish with the olive oil and yellow rice package, stir to mix up yellow rice seasoning. (Looks like a lot of water, but it will absorb.)
4. Place chicken in the dish either in a row, or chunked up in pieces. (Your preference.) Lightly sprinkle the dish with your chicken seasoning and some pepper.
5. Bake for 45 minutes, or until all of the broth is absorbed. Be sure to fluff rice before serving.
