Ingredients

1 cup(s) flour
2 large eggs
½ cup(s) vegetable oil
½ cup(s) brown sugar
0.33 cup(s) white sugar
1 ½ cup(s) grated carrots
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla essence
1 pinch(es) of salt
1 tsp ground cinnamon
1 tsp ground allspice
For the Frosting:
⅛ cup(s) soft butter
55 g soft cream cheese
1 cup(s) icing sugar
½ tsp vanilla essence
For the decoration:
some edible green paper
10 small chocolate eggs or marzipan eggs

Instructions

Preheat oven to 170 degree C. Place the cupcake cases in the tray.

In a bowl, whisk together eggs, oil, sugars and vanilla essence until well combined. Using a spatula, stir in dry ingredients and stir until well mixed. Next add in carrots.

Divide the batter into the cupcake cases amd bake for 15-20 minutes or until a cake tester comes out dry. Cool on wire rack.

For the frosting, mix together all the ingredients until smooth and creamy.

To decorate, spread 2 tablespoon of frosting on top of each cupcake, sprinkle with edible green paper in the middle to form a nest, and place a chocolate egg in the nest.
