Ingredients
1 cup(s) | flour |
2 large | eggs |
½ cup(s) | vegetable oil |
½ cup(s) | brown sugar |
0.33 cup(s) | white sugar |
1 ½ cup(s) | grated carrots |
1 tsp | baking powder |
1 tsp | baking soda |
1 tsp | vanilla essence |
1 pinch(es) | of salt |
1 tsp | ground cinnamon |
1 tsp | ground allspice |
For the Frosting: | |
⅛ cup(s) | soft butter |
55 g | soft cream cheese |
1 cup(s) | icing sugar |
½ tsp | vanilla essence |
For the decoration: | |
some | edible green paper |
10 small | chocolate eggs or marzipan eggs |
Instructions
Preheat oven to 170 degree C. Place the cupcake cases in the tray.In a bowl, whisk together eggs, oil, sugars and vanilla essence until well combined. Using a spatula, stir in dry ingredients and stir until well mixed. Next add in carrots.
Divide the batter into the cupcake cases amd bake for 15-20 minutes or until a cake tester comes out dry. Cool on wire rack.
For the frosting, mix together all the ingredients until smooth and creamy.
To decorate, spread 2 tablespoon of frosting on top of each cupcake, sprinkle with edible green paper in the middle to form a nest, and place a chocolate egg in the nest.
