Duck and avocado salad recipe details
Ingredients
2 | duck breasts |
1 tbsp | redcurrant jelly |
2 tbsp | soy sauce |
1 medium | lime |
1 tbsp | sesame oil |
4 leaves | lettuce |
2 leaves | radicchio |
1 small | avocado, ripe |
salt and fresh ground pepper, to taste |
Instructions
Preheat the oven to Gas Mark 4, 180°C, 350°F.Score the skin of the duck with a knife and rub in a little salt. Heat an ovenproof frying pan, add the duck skin-side down and cook on a moderate heat for 5 minutes.
Melt the redcurrant jelly with the soy sauce in a small pan.
Turn the duck over and drain off most of the fat into a small bowl. Brush the skin with half the jelly. Place the pan in the oven and roast for 15 minutes.
Cut two thin wedges from the lime and squeeze the juice from the rest, and add to the glaze mixture.
Wash and shake dry the salad leaves and shred the radicchio. Arrange on two plates. Peel the avocado and remove the stone. Slice it and share between the plates.
Remove the duck from the oven and allow it to rest for 5 minutes. Slice the breasts with a sharp knife and divide and arrange on the plates. Add the pan juices to the glaze and sprinkle over the duck and salad. Season and serve immediately.
