Ingredients

1 kg chicken breast fillet, cut into 2cm cubes
1 tbsp salt
1 tbsp paprika powder
1 tsp ground ginger
½ tsp garlic powder
¼ tsp pepper
¼ tsp turmeric
¼ tsp grated nutmeg

Instructions

Mix the chicken breast cubes with all the seasoning and let soak overnight in the refrigerator.

With a mincer, cut it up very fine until sticky. Divide the mixture as a longish roll on a transparent foil and wrap it up tightly. Make sure that there is no more air inside. Firmly tie both ends and then tie from the centre outwards into roughly equal portions, like nice balls.

In a dutch pan heat the water to 80 degrees C and hold it. Place in the sausage balls and blanch for about half an hour. Don’t allow to boil, or they will get dry and lose flavour.
