Dijon Baked Salmon

I love to fish for salmon, so by the end of summer we have a freezer full of fillets. This salmon recipe is easy to make and everyone loves it.

Ingredients
Serves: 4
- 1/4 cup butter, melted
- 3 tablespoons dijon mustard
- 2 tablespoons honey
- 1/4 cup bread crumbs (unseasoned)
- 4 salmon fillets (1/4 pound each)
- 1/4 cup chopped pecans
- 1 tablespoon chopped fresh parsley
- salt and pepper to taste
Preparation method
Prep: 20 mins | Cook: 15 mins
1. Heat oven to 400 degrees F.
2. In a bowl, combine butter, mustard, and honey and mix together. Set aside. In another bowl, mix bread crumbs, pecans, and parsley together.
3. Place salmon into a baking dish (I add oil to bottom to keep fillets from sticking.) Brush each salmon fillet lightly with honey mustard mixture, then sprinkle bread crumb mixture on the tops of the fillets.
4. Bake salmon 12 to 15 minutes in preheated oven, or until it flakes easily with a fork. Season with salt and pepper.
