Diabetic strawberry pie recipe details
I got this from a friend who was diabetic and loved desserts. This is one of her favorites. It makes a good dessert for summer time or anyone who wants to cut a few calories.

Ingredients
Serves: 8- 1 (12 ounce) can diet lemon lime soda (7-Up)
- 1 box sugar free strawberry jello
- 1 teaspoon cornstarch
- 2 teaspoons sugar substitute (Splenda, Equal, etc.)
- 1 (12 ounce) tub lite Cool Whip
- 2 cups sliced strawberries (fresh or frozen)
- 1 graham cracker crust
Preparation method
Prep: 40 mins | Cook: 20 mins | Extra time: 4 hours, chilling1. In a medium sauce pan; mix the soda, jello, cornstarch and sugar substitute. Gently whisk over low heat until it starts to thicken. It should be about honey thickness.
2. Remove from heat. Let cool for about 10 minutes. Add strawberries, and pour into the crust. Chill in the fridge several hours until set, at least 4 hours.
3. Top with Cool Whip and decorate with more fresh strawberries.
