Cranberry muffins recipe details
- Ingredients:
- 2 eggs, beaten
- 1/4 cup concentrated orange juice, thawed
- 3/4 cup light Miracle Whipsalad dressing
- 2 cups fresh or frozen whole cranberries
- 2 cups all-purpose flour
- 3/4 cup sugar
- 2 teaspoons grated orange rind
- 1 teaspoon baking powder
- 1 teaspoon baking soda
These Cranberry Muffins are made with local cranberries from the Bala, Ontario Bog.
Combine eggs, orange juice, salad dressing, and cranberries in a bowl. Combine flour, sugar, orange rind, baking powder, and baking soda in a separate bowl. Stir wet mixture into dry mixture. Fill greased or paper-lined muffin tins. Bake at 350 degrees for 20 to 25 minutes. Cool on wire rack.
Makes: 12 medium muffins
