Ingredients
For the Batter: | |
120 g | plain flour |
120 g | castor sugar |
120 g | butter |
½ tsp | baking powder |
2 medium | eggs |
1 tbsp | vanilla extract |
For the Frosting: | |
400 g | cream cheese |
200 g | butter |
400 g | icing sugar |
50 ml | espresso |
For Decoration: | |
coffee beans | |
sprinkles | |
grated chocolate etc |
Instructions
The amounts mentioned for the frosting are intended when using a piping bag. The amounts can be halfed if you want to only spread the frosting onto the cupcakes using a spatula.Making the cakes:
Preheat the oven to 190°C. Line muffin/cupcake tin with paper cases.
In a large bowl, beat together the flour, sugar and butter until light and fluffy. Add the eggs, one at a time and beat well after each addition. Thenadd the baking powder and vanilla extract. Blend until smooth.
Divide the mixture into the 6 holes of the muffin tins and bake in the middle of the oven for 15-20 minutes or until a skewer inserted into the centre of the cake comes out clean. Transfer the whole tins onto a wire rack to cool.
Making the Frosting:
Cream together the butter cream cheese. Add half of the icing sugar and mix until well incorporated. Then add the remaining sugar and beat well. Finally, add the espresso and beat again.
To assemble:
Spoon the frosting into a piping bag and pipe the frosting on top of each cupcake in any style you wish. Scatter with sprinkles, grated chocolate, coffee beans etc. Serve and enjoy!
