Trap the flavor of fresh scallops in a tasty fried blanket in this easy recipe for the deep fryer.

Ingredients
Serves: 6- 2 eggs, beaten
- 2 tablespoons milk
- 1 teaspoon salt
- 1/8 teaspoon black pepper
- 1 cup dried bread crumbs
- 2 pounds large scallops, rinsed and cut in half
- Vegetable oil, for frying
Preparation method
Prep: 10 mins | Cook: 12 mins1. Fill a deep fryer with oil according to manufacturer’s instructions. Heat to 375 degrees F.
2. Whisk eggs, milk, salt, and pepper together in a shallow pie pan. Pour bread crumbs into a second pan.
3. Dredge scallops in the bread crumbs, then coat in egg mixture. Dredge a second time in the bread crumbs.
4. Working in batches, fry the scallops in hot oil until browned on both sides. Each batch will take about 4 minutes. Drain on paper towels and serve.
