Ingredients
Makes: 12 crab cakes- 1 cup mashed potatoes
- 1 egg, beaten
- 1 tablespoon plus 1/2 cup dried bread crumbs
- 1 tablespoon finely chopped onion
- 1 tablespoon minced fresh parsley
- 1/2 teaspoon lime juice
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 1 pound fresh crab meat, cartilage removed
- 1/4 cup flour
- Vegetable oil, for frying
Preparation method
Prep: 15 mins | Cook: 15 mins1. Stir potatoes, egg, 1 tablespoon dried bread crumbs, onion, parsley, lime juice, salt, pepper, and crab together in a bowl. Form into 12 discs.
2. Stir flour and 1/2 cup dried bread crumbs together in a shallow pie pan.
3. Dredge the crab cakes in the flour mixture.
4. Pour 1/4 inch of oil in a skillet or deep fryer and heat to 375 degrees F.
5. Work in batches to fry the crab cakes in the hot oil, 4 to 6 minutes per batch, until the cakes are well browned. Drain on paper towels and serve.
