Deep fried chicken with a crust of rusk recipe details
Ingredients
2 small | chickens ; approx. 700g each |
150 g | flour |
4 | eggs |
salt | |
220 g | rusk |
mild paprika powder | |
clarified butter |
Instructions
Wash the chickens, pat dry and put them in boiling water for a minute. Then chill them briefly in cold water. Quarter each chicken with poultry shears, cutting out the backbone.Turn the chicken parts in flour. Whisk the eggs with some salt. Crumble the rusk and mix with paprika powder. Turn the chicken parts in the egg, then thoroughly in the crumbled rusk.
In a deep fryer or a large saucepan or deep skillet, heat clarified butter and deep-fry the chicken parts until golden brown and crispy. Drain surplus fat on kitchen paper and serve the chicken parts immediately with lemon wedges.
