- Ingredients
- 1 loaf French bread, cut into 3/4-inch slices
- 8 eggs
- 1-1/2 cups milk
- 1-1/2 cups half & half
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- Topping
- 1 cup brown sugar
- 1/2 cup butter
- 2 Tablespoons maple syrup
- 1 cup pecans, chopped
- Garnish
- Fruit
- Maple syrup
- Whipped cream
Generously grease the bottom of a 9 x 13-inch glass dish with vegetable shortening. Layer bread slices tightly in pan, side by side. In a bowl, beat the eggs well, then add the milk, half & half, vanilla, and cinnamon; mix well. Pour mixture over the bread evenly, making sure that all bread is saturated with the egg mixture.
Put topping ingredients in a bowl and heat in microwave on power level 5 for about 5 minutes to melt, then spread warm mixture evenly over bread slices. Refrigerate overnight, covered. Put fruit mixture in a covered glass bowl in the the refrigerator (cut strawberries in smaller pieces, and if using sliced bananas, add to fruit mixture in the morning).
In the morning, preheat oven to 350 degrees. Microwave dish for 3 to 4 minutes to get bread to room temperature. Bake (on a cookie sheet to catch drips) for 40 to 50 minutes for 1 dish and 50 to 60 minutes for more. Put fruit mixture in microwave to warm. Warm maple syrup in a small pitcher in microwave.
To serve, pour a small amount of heated maple syrup in a ring on plate and place a piece of French toast on plate. Top with warm fruit mixture, then top with whipped cream.
Yield: 6 large servings or 8 smaller servings.
