- Ingredients
- 1/2 cup flour
- 1/2 cup sugar (granulated)
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1 pound whole dates (pitted)
- 1/2 pound walnut halves
- 4 eggs, separated
This recipe came from my husband’s mother. She received it from her sister, Mrs. Frank Fay (Mamie Miller), who lived in Hayden, Arizona (now a part of Phoenix) in about 1924. The Fay family was from Rapid City, South Dakota.… Patti
We make these cakes in November for Christmas. Sometimes I use an extra 1/2 egg yolk.
Mix flour, sugar, salt, and baking powder and sift over dates and nuts. Beat egg yolks and mix with other mixture. It will not cover all ingredients. Beat the 4 egg whites until peaks hold then fold into the above mixture.
Line the bottom of a loaf pan with waxed paper which is greased slightly and pour mixture in pan. It is very stiff and not very moist but there is no other liquid. Bake in a 300-degree oven for 50 to 60 minutes. Cool in pan 5 or 10 minutes and then take out of pan. Remove waxed paper and cool. Can be stored in a plastic bag in the cupboard or frozen.
