Date and walnut loaf recipe details
Ingredients
200 g | dates, pitted, chopped |
30 g | butter, unsalted |
1 tsp | bicarbonate of soda |
250 ml | water |
140 g | light brown sugar |
2 medium | eggs, beaten |
250 g | plain flour |
2 tsp | baking powder |
1 ½ tsp | mixed spice |
1 pinch(es) | salt |
115 g | walnut, chopped |
Instructions
Heat oven to Gas Mark 4, 180°C, 350°F.Grease and line a 7 inch, 17-18cm round cake tin or a 2lb (900g-1kg) loaf tin.
Place dates, butter, bicarbonate of soda and water in a saucepan and bring to boil. Simmer for 2-3 minutes. Allow to cool and set aside.
Beat eggs with sugar in a large bowl until well combined. Add date mixture and then sift in remaining dry ingredients.
Add the walnuts and beat well.
Pour batter into prepared tin and bake for 1-1½ hours or until a skewer inserted into centre comes out clean.
Allow to cool in tin for about 10 minutes and turn out onto wire rack until completely cool. Remove lining and cut into wedges or slice loaf to serve.
