Ingredients
1 kg | fish, e.g. eel, halibutt, mackerel, ready to cook and cut in bite-sized pieces |
1 | lemon, juice and grated rind |
salt and pepper | |
paprika powder | |
2 | onions, chopped |
2 clove(s) | garlic, chopped |
2 tbsp | parsley, chopped |
1 tbsp | dill, chopped |
½ tbsp | tarragon, chopped |
½ tbsp | chervil, chopped |
80 ml | olive oil |
3 tbsp | tomato puree |
2 glass(es) | white wine |
Instructions
Sprinkle the fish with lemon juice, salt and paprika powder. Allow to stand for 15 minutes.In a saucepan, heat the oil. Sauté the onions, garlic, 1 teaspoon of lemon rind and the herbs. Add the tomato purée and cook stirring for a minute. Add the white wine and bring to the boil, then add the fish, cover and cook over low heat for approximately 10 minutes or until the fish is done. Season to taste with salt, pepper and paprika powder.
Serve with rice.
