Curry chicken soup recipe details
A quick and easy chicken soup with Indian flavor from curry powder and cumin.

Ingredients
Serves: 4- 1 tablespoon olive oil
- 1 onion, chopped
- 1 tablespoon grated fresh ginger
- Salt and pepper
- 2 teaspoons curry powder
- 1 teaspoon ground cumin
- 1 cup apple cider
- 1 sweet potato, peeled and cut into 1-inch chunks
- 1/2 head cauliflower, coarsely chopped
- 1/2 meat from a rotisserie chicken, shredded
Preparation method
Prep: 15 mins | Cook: 25 mins1. Pour oil into a large saucepan and set over medium heat. Cook onion, ginger, and 1 teaspoon salt in hot oil for about 5 minutes, then sprinkle with curry powder and cumin; continue to cook for another 3 minutes. Add cider, 4 cups water, and sweet potato.
2. When liquid comes to a boil, stir in cauliflower and turn the heat down to low. Simmer for 10 more minutes.
3. Pour some of the soup into a food processor or blender and pulse until smooth. Pour into a second saucepan. Continue until all soup is pureed smooth, then add chicken and heat through.
