Ingredients
Serves: 4- 1/4 cup yogurt
- 2 tablespoons mayonnaise
- 1 1/2 teaspoons curry powder
- 1 teaspoon honey
- 1/2 pound cooked, chopped chicken breast (see footnote)
- 1 apple, diced
- 2 celery stalks, finely chopped
- 2 ounces baby spinach
- 2 (10-inch) pita breads, cut in half
Preparation method
Prep: 15 mins1. In a large bowl, stir yogurt with mayonnaise, curry powder, and honey. Add chicken, apple, celery, and spinach; stir well to combine.
2. Stuff pita breads with the mixture. Serve.To cook chicken quickly:
For 1 1/2 cups cubed cooked chicken, in medium saucepan over medium heat, in 4 cups boiling water, cook 3/4 pound skinless, boneless chicken breasts (cubed) for 5 minutes or until chicken is no longer pink. (Or snag a pre-cooked rotisserie chicken from the supermarket.)
