A quick and easy lunch that’s pretty easy on the calories, too.
Ready in: 15 mins

Ingredients

Serves: 4
  • 1/4 cup yogurt
  • 2 tablespoons mayonnaise
  • 1 1/2 teaspoons curry powder
  • 1 teaspoon honey
  • 1/2 pound cooked, chopped chicken breast (see footnote)
  • 1 apple, diced
  • 2 celery stalks, finely chopped
  • 2 ounces baby spinach
  • 2 (10-inch) pita breads, cut in half

Preparation method

Prep: 15 mins

1. In a large bowl, stir yogurt with mayonnaise, curry powder, and honey. Add chicken, apple, celery, and spinach; stir well to combine.
2. Stuff pita breads with the mixture. Serve.To cook chicken quickly:

For 1 1/2 cups cubed cooked chicken, in medium saucepan over medium heat, in 4 cups boiling water, cook 3/4 pound skinless, boneless chicken breasts (cubed) for 5 minutes or until chicken is no longer pink. (Or snag a pre-cooked rotisserie chicken from the supermarket.)
