Ingredients
Serves: 6- 6 cups of water
- 4 vegetarian bouillon cubes
- 4 medium potatoes
- 3 stalks celery, chopped
- 3 fat leeks, sliced (whites only)
- 1.5 tablespoon McCormick “Gourmet Collection” curry powder
- 1 teaspoon dill weed
- 1 teaspoon ground cayenne pepper
- 8 oz Cheddar cheese, shredded
Preparation method
Prep: 10 mins | Cook: 1 hour1. Boil water and bouillon together in a large pot. Add potatoes once bouillon is dissolved. Cover. Cook at a low boil for about 40 minutes.
2. Add celery and leeks. Add curry powder, dill weed, and cayenne. Stir to combine. Re-cover and cook an additional 10 minutes.
3. Add cheddar cheese and re-cover. Stir thoroughly after 5 minutes. Cook for 5 minutes longer.
