A variation on potato leek soup, this recipe uses grocery store curry powder and cayenne pepper to impart a special kick. Make sure you like curry powder!
Ready in: 1 hour 10 mins

Ingredients

Serves: 6
  • 6 cups of water
  • 4 vegetarian bouillon cubes
  • 4 medium potatoes
  • 3 stalks celery, chopped
  • 3 fat leeks, sliced (whites only)
  • 1.5 tablespoon McCormick “Gourmet Collection” curry powder
  • 1 teaspoon dill weed
  • 1 teaspoon ground cayenne pepper
  • 8 oz Cheddar cheese, shredded

Preparation method

Prep: 10 mins | Cook: 1 hour

1. Boil water and bouillon together in a large pot. Add potatoes once bouillon is dissolved. Cover. Cook at a low boil for about 40 minutes.
2. Add celery and leeks. Add curry powder, dill weed, and cayenne. Stir to combine. Re-cover and cook an additional 10 minutes.
3. Add cheddar cheese and re-cover. Stir thoroughly after 5 minutes. Cook for 5 minutes longer.
