Ingredients
Serves: 8- 10 slices whole-grain oat bread
- 2 tomatoes, thinly sliced
- 4 ounces Cheddar cheese, coarsely grated
- 4 whole eggs
- 4 egg whites
- 1 1/2 cups reduced-fat milk
- 1 1/2 teaspoons curry powder
- 1/4 teaspoon salt
- Ground black pepper, to taste
- 2 teaspoons vegetable oil
- 4 thin slices bacon
Preparation method
Prep: 10 mins | Cook: 45 mins | Extra time: 1 hour, soaking1. Coat a 12×9-inch baking dish with nonstick cooking spray.
2. Arrange 5 bread slices in the bottom of the prepared baking dish, then distribute tomato slices and half of the cheese on top. Then arrange the remaining bread, tomatoes, and cheese in the same order on top.
3. In a mixing bowl, whisk together the eggs, egg whites, milk, curry powder, salt, and pepper. Pour over the casserole and use a spatula to press the bread down to absorb the liquid.
4. Cover dish with foil and allow to chill and soak in the refrigerator for at least 1 hour. (Overnight works too.) Remove foil.
5. Preheat oven to 350 degrees F and bake the casserole for about 30 minutes. Arrange bacon on top of the casserole and return to oven for 15 more minutes. Remove from oven, let sit for 10 minutes, then slice and serve.
