These small pizzas pack a bacony, oniony punch. An easy lunch for four hungry dudes.
Ready in: 25 mins

Ingredients

Serves: 4
  • 6 slices thick-cut bacon
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • Salt and pepper
  • 1 pound refrigerated pizza dough, divided into four pieces
  • 1 1/2 cups shredded Monterey Jack cheese
  • 2 tomatoes, sliced

Preparation method

Prep: 20 mins | Cook: 5 mins

1. Preheat grill to medium and oil the grate.
2. Cook bacon in a skillet over medium heat until crisp, about 7 minutes. Remove from the skillet and add the onion; cook in bacon fat until the slices begin to brown, seasoning with salt and pepper, about 10 minutes.
3. Press each dough portion out into a 4-inch circle. Place on grill and close the lid. Cook for about 3 minutes until dough is cooked on the bottom, then flip and top with onion, cheese, and bacon. Grill for another 2 minutes.
4. Slice and serve.
