Cucumber Couscous Salad recipe
|2 medium||cucumbers, peeled, sliced and quartered|
|120 ml||low fat yoghurt|
|2 tbsp||fresh dill, minced|
|2 tbsp||white vinegar|
|1 tbsp||olive oil|
|some||salt and freshly ground pepper, to taste|
Bring water to a boil and stir in couscous.
Remove from the heat, cover and let stand for five minutes. Stir with a fork and cool to room temperature.
In a large bowl, combine the couscous, cucumbers and onions.
In another bowl whisk together the buttermilk, yogurt, dill, vinegar, oil. Season with salt and pepper. Pour over couscous mixture.
Cover and refrigerate for at least one hour.
