Couscous salad with shrimp recipe details
Ingredients
450 ml | water |
150 g | couscous |
250 g | tomatoes |
250 g | shrimps |
5 tbsp | fresh lemon juice |
3 tbsp | olive oil |
5 tsp | grated lemon peel |
salt and pepper to taste | |
fresh parsley, chopped |
Instructions
In a saucepan bring water to a boil and cook the couscous. When ready remove from heat, and let stand, covered for 5 minutes; then let cool for another 10 minutes without being covered.In a large bowl combine cooked couscous, cherry tomatoes, parsley and then toss gently.
Combine lemon juice, olive oil, grated lemon peel and salt and pepper in a and then add to couscous and toss.
