Ingredients

400 g shallots, sliced
4 sprig(s) thyme, chopped
1  egg
2 tbsp milk
8 tbsp cornflakes, crushed
3 tbsp breadcrumbs
4  pork cutlets
2 large can(s) Baked Beans in Tomato Sauce
2 clove(s) garlic, minced
6 tbsp flour
5 tbsp oil
4 tbsp sugar
300 ml red wine
salt and pepper
5  shallots, quartered

Instructions

In a bowl, whisk the egg with the milk. In a separate bowl, mix together the cornflakes and breadcrumbs. Season the cutlets with salt and pepper. First turn the cutlets in the milk mixture, than in the cornflakes mixture. Coat thoroughly. In a saucepan, heat 3 tablespoons of oil and fry the cutlets from both sides over medium heat until golden brown and crispy.

In another saucepan, heat ½ tablespoon of oil. Add the shallots and the garlic and fry over medium heat until lucent. Pour in the baked beans and cook for 5 minutes. Season to taste with salt and pepper.

In a separate pan, heat 1,5 tablespoons of oil. Add the shallot quarters and fry over low heat for 5 minutes. Sprinkle with sugar and cook until caramelized. Pour in the wine and the thyme. Cook over low heat until thickened. Season with salt and pepper.

To serve, arrange the crispy cutlets and the baked beans on serving plates and pour over the red wine sauce.
