Ingredients
Makes: 22 wraps- 1 sweet potato
- 1/2 cup canned black beans, rinsed
- 1/4 cup chopped red onion
- 2 tablespoons minced fresh cilantro
- 1 tablespoon lime juice
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1 teaspoon chopped jalapeno pepper
- 1 garlic clove, minced
- 22 wonton wrappers
- 1 tablespoon olive oil
Preparation method
Prep: 40 mins | Cook: 15 mins1. Puncture sweet potato with a fork several times, then place microwave on High until tender, about 13 minutes. Scoop flesh out from the potato shell and collect in a bowl.
2. Mash sweet potato flesh with remaining ingredients, except for wonton wrappers.
3. Preheat oven to 375 degrees F and coat a baking sheet with nonstick cooking spray.
4. Stuff wontons with the filling, moistening the edges of each wrapper with water, placing 1 tablespoon of filling towards one side, and rolling up like a burrito.
5. Set the mini wraps on a baking sheet. Brush with olive oil.
6. Bake for 15 minutes, until crisp and lightly browned.
