Ingredients
Serves: 8- 2 cups flour
- 2 teaspoons salt
- 2 teaspoons Cajun seasoning
- 1 1/2 teaspoons pepper
- 1/8 teaspoon ground cinnamon
- 2 eggs
- 1/4 cup water
- 2 cups mashed potato flakes
- 2 pounds bass fillets
- 6 tablespoons canola oil
Preparation method
Prep: 15 mins | Cook: 16 mins1. Set up dredging stations: flour, salt, Cajun seasoning, pepper, and cinnamon in one shallow pie pan, eggs and water in a second pan, and mashed potato flakes in a third.
2. Dip fish in the flour mixture, then in the eggs, and finally dredge in the mashed potato flakes.
3. Pour 3 tablespoons oil into a large skillet and set over medium-high heat. Cook half of the fish in the hot oil for about 8 minutes, flipping once midway through cooking time, until fish is cooked through.
4. Repeat with remaining oil and fish. Serve.
