Ingredients

3 tbsp groundnut oil
3 clove(s) garlic, sliced
1 large onion, sliced
2  chili peppers, seeded and sliced
100 g ginger, cut into thin stripes
500 g chicken thigh fillets, trimmed and thinly sliced
250 g mushrooms, sliced
400 g pak choi, sliced
250 g snow peas
1 handful basil leaves, sliced
For the stir-fry sauce:
2 tbsp soy sauce
2 tbsp fish sauce
1 tbsp rice vinegar
1 tsp brown sugar
1 tsp cornflour, mixed with 2 tbsp water

Instructions

Mix all ingredients for the stir-fry sauce and stir until sugar has dissolved. Heat potjie over hot charcoals and add the oil. Add the garlic, stir and add the onions, chilies and half of the ginger. Stir-fry for 15 seconds. Add the chicken and mushrooms and stir-fry for 8 minutes. Add the remaining ginger and vegetables to the pot and stir-fry for 2 minutes.

Stir the stir-fry sauce, add to the pot and stir until thickened. Taste and add fish sauce, sugar or chili as desired.

Serve with rice and sprinkled with basil leaves.
