Asian chicken stir fry recipe details
Ingredients
3 tbsp | groundnut oil |
3 clove(s) | garlic, sliced |
1 large | onion, sliced |
2 | chili peppers, seeded and sliced |
100 g | ginger, cut into thin stripes |
500 g | chicken thigh fillets, trimmed and thinly sliced |
250 g | mushrooms, sliced |
400 g | pak choi, sliced |
250 g | snow peas |
1 handful | basil leaves, sliced |
For the stir-fry sauce: | |
2 tbsp | soy sauce |
2 tbsp | fish sauce |
1 tbsp | rice vinegar |
1 tsp | brown sugar |
1 tsp | cornflour, mixed with 2 tbsp water |
Instructions
Mix all ingredients for the stir-fry sauce and stir until sugar has dissolved. Heat potjie over hot charcoals and add the oil. Add the garlic, stir and add the onions, chilies and half of the ginger. Stir-fry for 15 seconds. Add the chicken and mushrooms and stir-fry for 8 minutes. Add the remaining ginger and vegetables to the pot and stir-fry for 2 minutes.Stir the stir-fry sauce, add to the pot and stir until thickened. Taste and add fish sauce, sugar or chili as desired.
Serve with rice and sprinkled with basil leaves.
