- Ingredients:
- 7 pounds medium-size pickles (cucumbers), cut into small slices
- Day One:
- Make Brine of:
- 1 pint salt to 1 gallon water
- Put pickles in brine for 5 days. Cover with weight, stir daily
- Day 6:
- Drain and soak in clear water for 2 days
- Day 8:
- Drain and cover with boiling water and 2 Tablespoons alum (dissolved)
- Day 9:
- Drain and cover with boiling water, let stand, cool, and drain
- Make syrup and pour over pickles while hot
- Syrup:
- 6 pounds sugar
- 3 pints vinegar
- 4 teaspoons whole mixed pickling spice
- 4 teaspoons celery seed
- Day 10:
- Drain, heat syrup and pour over pickles again
- Day 11:
- Drain, heat syrup, put pickles in small jars, cover with hot syrup and seal jars immediately.
Growing up in Lancaster County means a big garden in your back yard and weekly visits to the local Farmer’s Market still open three days a week. One of our summer traditions was to make sweet pickles in old crocks to fill the pantry for winter.
