Aunt Vi’s Rice Pudding recipe

- Ingredients – Single Recipe:
- 1 quart whole milk
- 1/2 cup Carolina rice
- 1/2 cup sugar
- 1 small can (5 ounces) evaporated milk
- 1 egg, beaten (2 if small)
- 1 teaspoon vanilla
- 1/2 cup raisins (optional)
- Ingredients – Double Recipe:
- 1/2 gallon milk
- 1 cup Carolina rice
- 1 cup sugar
- 1 large can (12 ounces) evaporated milk
- 2 large eggs, beaten
- 2 teaspoons vanilla
- 1 cup raisins (optional)
Rinse a pot with cold water. Pour whole milk into pot and cook on medium heat until scalded. Add rice and raisins and cook 30 minutes over medium heat, maintaining a slow boil, stirring occasionally and skimming the top.
Meanwhile in a small bowl, beat eggs. Add sugar, a little at a time, while mixing. Add evaporated milk and stir until all ingredients are combined. Let stand while rice is cooking so eggs can reach room temperature.
After 30 minutes or when rice is done, mix sugar mixture again. Slowly drizzle sugar mixture onto rice mixture while stirring. Cook another 4 minutes. Remove pot from heat. Stir in vanilla and let cool. Refrigerate any leftover portions. Sprinkle with nutmeg and/or cinnamon if desired.
