Cress soup recipe details
Ingredients
75 g | cress, roughly chopped |
300 g | potatoes, peeled and cut into 2cm cubes |
500 ml | vegetable stock |
150 ml | crème fraîche |
1 | lime, grated peel and juice |
2 tbsp | butter |
salt and pepper | |
nutmeg |
Instructions
Heat the butter in a saucepan, add potatoes and cook stirring over low heat for about 5 minutes. Season with salt, pepper and nutmeg. Add the stock and bring to a boil. Let simmer for about 10 minutes or until the potatoes are done.Take out a ladle of potatoes. Purée the soup with a hand blender. Return the potato cubes and stir in 2/3 of the cress and the crème fraîche. Heat, but don’t allow to boil anymore. Season to taste with salt, pepper, nutmeg, lime juice and lime peel.
Ladle into soup bowls and serve sprinkled with the remaining cress.
