Ingredients

Serves: 4
  • 1 (9 ounce) package refrigerated cheese tortellini
  • 1 pound raw medium shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 teaspoons lemon zest
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried red pepper flakes
  • 2 shallots, chopped
  • 2 garlic cloves, minced
  • 2 (14 1/2 ounce) cans diced tomatoes, with juices
  • 1 (8 ounce) bottle clam juice
  • 1/2 cup white wine
  • 2 tablespoons balsamic vinegar
  • 4 thyme sprigs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup half and half
  • 10 fresh basil leaves, sliced
  • 2 tablespoons minced chives

Preparation method

Prep: 20 mins | Cook: 30 mins

1. Bring a large pot of salted water to boil over high heat. Add pasta and cook until al dente, according to package instructions. Drain.
2. While pasta is cooking: pour 2 teaspoons oil into a large skillet and set over medium heat. Cook shrimp in hot oil for about 4 minutes, until the shrimp turn pink and curl.
3. Toss shrimp with lemon zest, 1/8 teaspoon pepper, and red pepper flakes. Transfer to a bowl and cover with foil.
4. Pour the rest of the oil into the skillet and turn heat to low. Add shallots and cook in hot oil for about 10 minutes to brown. Stir in garlic, tomatoes, clam juice, wine, vinegar, thyme, and the rest of the pepper.
5. When mixture comes to a boil, cook for about 10 minutes. Then turn off heat and add cheese, cream, basil, chives, shrimp, and drained tortellini.
6. Heat through, then serve.
