Creamed salt cod recipe details
Ingredients
750 g | salt cod |
900 ml | milk |
60 g | butter |
3 tbsp | flour |
½ tsp | cayenne pepper |
Instructions
Allow at least 24 hours before cooking preparation, better 48 hours, to soak the cod. Put the cod in fresh water and change the water frequently. Leave in refrigerator, always covered.After 48 hours take out the cod and remove all bones and skin and pull the cod into chunks with your fingers.
Put water into a pan to cover the cod and bring to a simmer for about 30 minutes – the cod should be tender.
Melt the butter, stir in the flour and cayenne pepper. Cook over a low heat for about a minute, stirring all the time.
Slowly add the milk and continue to cook over low heat, stirring constantly. Cook the sauce for about 5 minutes or until it thickens.
Drain the fish and put it into the sauce and serve over mashed potatoes.
